This gourmet salad green also known as escarole, produces large broad leaves on plants up to 15" (38cm) across. the leaves are curled and have a sharper flavor and more substance than lettuce. Use mixed greens in salads, as cooked greens, and as a garnish. Tastiest crops are timed for harvesting during the cool weather.
Plant: Direct sow in mid-spring only where summers are cool. Otherwise, sow in late summer for autumn harvest. In mild areas, plant in fall also.
Care: Blanch hearts, to make mild an tender, by tying outer leaves together over center 2-3 weeks before harvest.
Harvest: Pick entire plant using inner leaves for salads and outer leaves as garnish or as cooked greens.
