Leeks have a delicate flavor much like a sweet, mild onion and are highly prized for gourmet cooking. The tender, white stems, that can be as long as 10" (25cm), are used to flavor soups, stews and require several months from seed to harvest. Mature plants keep well in the garden where the ground doesn't freeze.
Plant: Sow indoors 10-12 weeks before last frost. Shift hardened transplants to the garden in late spring. In frost free areas, sow again in late summer.
Care: Water regularly and fertilize when plants are 4" (10cm) tall and again in late summer.
Harvest: Pull entire plant when stem reaches 1-2" (2.5-5cm) diameter. Cut off roots and tough green leaves.
Your Health: Supplies moderate amounts of fiber, iron and potassium.
